Parmesan and Herb Crusted Turkey Breasts

I have tried this recipe with both Turkey breasts and steak slices, both worked out fine.  This just could not be more simple to make and the Chief Taster scoffed them down without inhaling.  Which I took as a good sign.. The most important thing about this recipe is to use that very dry Parmesan which you usually buy in a cardboard container.  Fresh does not work…at all…And hey, it’s a great alternative to breadcrumbs!

I added dried herbs to this but you could add spices of your choosing.  Cayenne pepper would be nice I think.

INGREDIENTS

4 Turkey breasts/turkey steaks

1 egg, beaten

1/2 cup dried Parmesan (not fresh, but the boxed stuff)

1 tspn dried oregano

METHOD

  • Preheat the oven to 180C/350F degrees
  • Line up  a bowl with the beaten egg, and a small plate with the Parmesan and dried herbs mixed together.
  • Dip the turkey in the beaten egg, then into the Parmesan cheese, rolling it around to make sure that it is covered.
  • Place on a baking tray/shallow oven dish and bake for 25 minutes.
  • Eat and enjoy!
