Zucchini, Pea and Mint Soup

Yet another green soup!  The zucchini (courgette) gives the thickness of the soup and the pea gives the deep green colour.  The mint flavouring lifts it.  All together these three ingredients make a lovely comfort soup.  It might be nice cold, but have not tried it cold yet. The Chief taster loved it and was requested for lunch the next day!

This is just so simple to make but full of flavour…my type of cooking!  There is nothing like a hearty soup for comfort food..okay, apart from chocolate and yummy cupcakes…I love having soup for lunch as it is quick, nutritious and keeps me going all afternoon during a busy day.  Let alone low in carbs and full of goodness!

INGREDIENTS

2 tblspns coconut oil (or oil of your choice)

1 onion, peeled and chopped

2 garlic cloves, peeled and chopped

4 zucchini (courgette), chopped

500g peas (fresh or frozen)

3 cups vegetable stock

3 tblspns fresh mint, finely chopped

1/4 tspn salt

1/4 tspn pepper

Another bowl of gorgeousness!

METHOD

  • Heat the oil in a saucepan and add the onion and garlic.  Cook until softened (about 10 minutes)
  • Add the zucchini (courgette) and stock.  Bring to the boil, cover and simmer for 20 minutes.
  • Remove from the heat, add the mint and season.
  • Blend until smooth.
  • Serve, slurp and enjoy!

    What a beautiful soup. I do love pureed soups….they’re so comforting. Are you still able to buy fresh local zucchini? My squash plants don’t seem to last long, so I am buying store zucchini again…..but I’m still picking peppers and eggplant.

      Sadly now at buying mind from the stores, although they are not really the best quality now. But okay for blitzing in a soup.
