Lettuce Wraps

Using lettuce leaves as a replacement for sandwiches is a healthy and tasty way to have a snack or add to your lunchbox.  You can use any filling that you want – shredded chicken, chopped hardboiled eggs, grated cheese, mixed vegetables..the list goes on..

INGREDIENTS

3-4 large lettuce leaves

125g cream cheese

55g grated Cheddar Cheese

2-3 tspn mayonnaise

1/2 tomato, finely chopped

salt and pepper

METHOD

  • Mix the cream cheese, cheddar and mayonnaise together.
  • Spoon the mixture onto the lettuce leaves, and top with the tomato.  Season to taste.
  • Roll up the lettuce leaf like a little parcel.
  • Eat and enjoy!
