Pretend Ice Cream (dairy free)

Strawberry and Coconut!

I love ice cream and frozen yoghurt but after reading how much sugar is in both, screamed, and looked for an alternative.    This is quick and easy way to make an alternative to ice cream and also is dairy free.

You basically blend frozen berries with nut milk in a blender.  It gives a melted ice cream consistency.  Or like a very thick shake.   It is also nice for breakfast when you are in a rush and don’t want to cook.    I use berries, but used to do this with bananas too.   The bananas were sliced and frozen for a minimum of an hour.  Blitz in the blender with soya milk and voila!   I find this dish sweet enough without any other flavourings but you could always add Agave/Honey to it if you wanted it sweeter.   My current favourite is strawberry and coconut milk…just devine!

INGREDIENTS

100g frozen berries

400ml almond/soy/coconut milk (milk of your choice)

Mixed berries with almond milk

METHOD

  • Place berries and milk in a blender.
  • Blitz until creamy.   Add more milk to get the consistency you require.
  • Eat and enjoy!

Creamy, dairy free goodness!

      Hope you enjoy it! My personal favourite is frozen strawberries and coconut! It tastes as if it should be so bad too! But you can munch away happy that it will not be as bad as tucking into a tub of ice cream!
