These have been going around the low carb community for years and I have only just found them….feel as if I am so late to this party I might as well stamp Nerd on my head and pants myself….Still, yummy and a perfect treat on a warm day.
You can use various flavouring to these as well. I have tried crushed berries which were lovely. Lemon would be refreshing…I might try those for the next batch. Or just plain vanilla is addictive. Perfect when you have a sweet tooth moment!
- 8oz ounces cream cheese, softened
- ½ cup butter, softened
- ½ cup erythritol (ground) or other sweetner of your choice
- ½ tspn vanilla
- Whisk all ingredients until fluffy. Drop spoonfuls onto a wax paper lined baking sheet or into small cupcake cases. Freeze until firm for at least an hour.
- Eat frozen and enjoy!
