Chocolate and Cherry Cupcakes (with Coconut Flour)

The base recipe for the cupcakes comes from the Comfy Belly site which is one of my favourite for recipes, especially for cupcakes with coconut flour.   I had an afternoon of trying many recipes for coconut flour cupcakes and Comfy Belly wins hands down…no contest really..

One batch (from another site I hasten to mention) even went into the bin which must have been a first for this household..(I have still not got used to cooking with Stevia!)…. I added cherries and a few chunks of chocolate and yum! Almost a black forest gateau in a cupcake….squirt with some cream and you have a purring Diva……well, pass me a glass of cherry vokda to compliment these bad boys and I call that one hell of a breakfast!  Or a midday meeting…..Or a nice evening in with the cats…so versatile…

INGREDIENTS

1/4 cup coconut flour

1/4 cup cocoa

1/4 tspn salt

1/4 tspn baking soda

3 eggs

1/2 cup Agave syrup

50g dark chocolate, broken into small chunks

50g cherries, pitted

METHOD

  1. Preheat the oven to 180C/350F.
  2. Combine all the dry ingredients and mix well.
  3. Add the wet ingredients to the dry ones and blend well (I use a hand blender).  You need a smooth mixture with no lumps.
  4. Fill cupcake cases to 3/4 full, press in a couple of cherry and chocolate pieces.
  5. Bake for 20 minutes.
  6. Eat and enjoy!
