1/4 cup erythritol (or other sugar substitute)
2 tpsns vanilla
1 1/4 cups mascarpone cheese
1 1/2 cups brewed strong coffee
1 tblspn cocoa powder
- Cut the coconut flour pancakes into strips. Dip and soak in the coffee.
- Put the strips on a bottom of a 8 x 8 dish. Layer the mascarpone mixture, then repeat with another layer of pancake strips and mascarpone. Sprinkle the cocoa powder on the top.Put in the fridge for an hour.
- Eat and enjoy!
