Cucumber Salad with Mint and Feta Cheese

This is a lovely fresh salad and is very refreshing.  I add lemon juice to this but you could replace this with white wine vinegar instead. 

INGREDIENTS

2 cucumbers 

1/4 red onion, thinly sliced

3 radishes, thinly sliced

1 tbspn fresh mint leaves

1 tbspn lemon

1 tbspn olive oil

75g Feta cheese

Salt and pepper

METHOD

  1. Put all ingredients into a bowl, season with salt and pepper and gently toss.
  2. Eat and enjoy!
