In my research for a low carb/no gluten lifestyle I found out about the joys of coconut flour. Made from the meat of coconuts after the milk has been removed, this flour is loaded with nutrients and ticks all my boxes. It is gluten-free, high in fibre, low carb and high in protein. There are several benefits to the coconut oil found in coconut flour. It helps to increase the metabolism so calories are burnt by the body instead of being stored as fat. Moreover, coconut oil contains lauric acid that is antimicrobial and helps to fight viral infection. Since it is also already sweet, less sugar (or sugar alternatives) is required for recipes.
Whoever said “you can’t have your cake and eat it too” was definitely in the dark about the benefits of coconut flour!
I am now using this in replace of regular flour and cooking up muffins, pancakes and cakes. So far so good. Am yet to try some cookies but that is on my list of things to try, along with some bread. It sucks up moisture so you often need a lot of eggs but hey, it still comes out delicious and is so healthy for you. I find because of the high fibre I only eat a couple of the pancakes/muffins/cakes too. And my bathroom scales are always nice to me after eating them. A win-win all round!
